Cashew chikki (Indian nut brittle) is one of my favorite things.  I’ve recently figured out how easy it is to make at home, so here’s my latest batch.

      Melt 1 cup of sugar in a pan and then stir in 1 cup of toasted cashew pieces. Lay it out flat between layers of parchment and then cut with a knife while it’s still somewhat warm. So easy!
